Before camp care is an additional cost. Note: additional care is supervised childcare only. We do not run any organized games or activities during this time. We highly recommend campers bring a game or book. If they wish, they can assist staff with setting up for the day.

Morning Huddle
 
Campers gather around Chef’s table to go over and get pumped for the day’s menu, activities, and goals. Any questions about the previous day’s items may be asked at this time. Chefs will discuss the morning Mise en place (MEP) necessities and direct the campers to begin morning MEP prep.
9:10 am – 10:25 am
 

Morning Menu Preparation

In partners, campers prepare the morning recipes of the day which will be eaten for their lunch (Except for Budding Bakers Jr & Perfecting Pastries). During this time, instructors and camp counselors circulate assisting campers with their recipe execution.

We prepare an average of 3 morning recipes. Recipe preparation is always preceded by Mise en place prep (pre-measuring and organizing all ingredients), as well as, a full scale cooking demonstration conducted by their chefs. Campers will learn how to prepare the dishes at hand through a visual demonstration of each menu item, coupled with culinary theory, tips and industry tricks pertaining to those items. Once campers have watched the demo, they will then partner up to complete the menu item at hand. Menu preparation is followed by time to clean up, reset and prepare the MEP for the next recipe.

10:25 am – 10:30 am

Transition

Campers will remove their chef coats and aprons and dress in their outdoor attire (hats, sunscreen, outdoor shoes). We will encourage our campers to take a hydration break prior to leaving the building.

10:30 am – 10:45 am

Morning Recess

Campers take a quick recess outside and eat a snack that they have brought from home. All snacks must be peanut and treenut free. The morning recess is free play. Rooks to Cooks provides a “box of fun” comprised of various art supplies, games, toys, balls, etc. for campers to play with if they choose. Campers are also welcome to bring any books, games, toys, etc. from home, if they wish.

10:45 am – 10:50 pm

Transition

Campers will remove their outdoor attire (hats, sunscreen, outdoor shoes) and redress in their Rooks to Cooks uniform (chef coat, apron & indoor shoes). We will encourage our campers to take another hydration break before regrouping for their mid-morning Huddle.

10:50 pm – 10:55 pm 

Mid Morning Huddle/Chef’s Demo

Campers will huddle around the Chef’s table for further instruction. Depending on the menu, chefs may launch into a chef’s demo, or simply talk through the next recipe with the campers.

10:55 am – 12:00 pm

Morning menu preparation continued

Campers will partner up and continue the cooking processes that they began prior to recess. Once again, instructors and camp counselors will circulate assisting campers with their recipe execution.

12:00 pm – 12:30 pm

Clean Down and Lunch Set Up

Campers clean up from their morning menu preparation and set up for their lunch. Here at Rooks to Cooks we believe it is important to teach our campers about sanitation and cleanliness. As such, they are highly involved in the cleaning and maintenance of cleanliness standards here at camp. Clean up is comprised of washing, sanitizing and drying their work stations, sweeping the floors, and some dishwashing. Once clean, campers will organize the tables and chairs, and lunch will be eaten as one big happy R2C family!

12:30 pm – 1:15 pm

Lunch and Break Time

Campers sit down and enjoy their lunch. After they have finished eating, camp counselors will take the group outside and run a “game of the day” or “activity of the day”. If campers choose not to participate, then they are welcome to use the “box of fun” and spend their break time as they wish OR begin preparing decorations for the Friday night restaurant. Campers are encouraged to join in on the group game/activity of the day to get them running around and active, however, the choice is theirs to make.

1:15 pm –  1:20 pm

Transition

Campers will remove their outdoor attire (hats & outdoor shoes) and redress in their Rooks to Cooks uniform (chef coat, apron & indoor shoes). We will encourage our campers to take another hydration break before regrouping for their afternoon huddle.

1:20 pm – 1:25 pm

Afternoon Huddle

Campers gather around Chef’s table to go over the afternoon menu item/items Mise en place (MEP). Campers will then partner up and begin their afternoon MEP prep.

1:25 pm – 3:30 pm

Afternoon Menu Preparation  

Campers partner up and prepare the afternoon recipe/recipes of the day. During this time, instructors and camp counselors circulate assisting campers with their recipe execution.

Once campers have watched the demo, they will then regroup with their partner to complete the menu items at hand.

Afternoon recipes may be used for the following purposes: (1) Daily takehomes for the campers to share with their families; (2) Two-part recipes or prep for next day recipes; (3) Prep for pop-up restaurant.

3:30 pm – 3:50 pm

End of the Day Clean Down

Campers clean up from their afternoon menu preparation. Clean up is comprised of washing, sanitizing and drying their work stations, sweeping the floors, and some dishwashing. If time permits, campers will take a quick afternoon recess outside.

3:50 pm – 4:00 pm

End of the Day Huddle

Before campers leave, the group gathers to conduct their daily “check in”. Campers will go around in a circle and share their favourites from the day and what they learned. Once all campers have shared with the group, their chefs will end the huddle with the next day’s menu outline, getting the group hyped and excited for the following day of camp!

4:00 pm – 5:00 pm

POP UP DAY AT A GLANCE

Afternoon Huddle/Pop up Huddle

Campers will divide into front of the house staff and back of the house staff. Front of the house is comprised of the hosts & servers, while the back of the house is comprised of the chefs & the bartenders.

Campers will receive their designated pop up duties and be instructed on how to accomplish them.

1:25 pm – 4:00 pm

Pop up Preparation

Campers will work with their instructors to reorganize the space and prepare all the necessary components needed to execute the pop up restaurant.

4:00 pm – 4:25 pm

Campers will take an afternoon break. During this time they will be served an early dinner comprised of cheese pizza meant to tide them over during the pop up.

NOTE: Participating campers are not to be picked up at 4:00 pm. However, any campers who will not be participating in the pop up are to be picked up at 4:00 pm, as per usual, unless after care is scheduled.

4:30 pm – 6:00 pm

Pop up restaurant proceeds. We have three reservation times: 4:30 pm, 4:45 pm and 5:00 pm. When the last table has been served their dessert, we will conduct a graduation ceremony to recognize the campers’ accomplishments. All campers and families are to leave once the graduation ceremony has ended.
