Winter break workshops are back and better than ever! After a full year of experimenting with new structures, menus, and class themes, we are proud to say we’ve perfected our curriculum and are beyond thrilled to release our most innovative and exciting programs to date!

For families looking to keep their kiddo busy, engaged and learning this winter break, our culinary camp programs are sure to satisfy.

In order to fit your family’s schedule, you have the option of enrolling half day or all day. 

All Winter Break Workshops are offered as 3 hour classes from 9:00am – 12:00 p.m. and 1:00pm – 4:00 p.m.

Register your child for both an AM and PM session for a full day program with lunch and activities between the morning and afternoon sessions.

 COURSE DESCRIPTIONS 

Burgers and Fries 101 (Age 7+)

December 27th

Veggie, beef, chicken and even turkey, there’s no arguing burgers are some of the most versatile menu items on the planet. In our Burgers and Fries 101 workshop, campers will learn all the tricks of the trade when it comes to homemade burger buns, patties, fries, and even condiments – all made completely from scratch! 

Our chef instructors will share industry tips and techniques as they guide participants through every recipe, helping them gain skills and confidence in the kitchen. This is a workshop you’re not going to want to miss, secure your child’s spot today!

  • What gluten is and why it’s important when making bread 
  • How to make, shape and bake fresh burger buns 
  • What egg wash is and it’s uses 
  • How to make the best burger patties 
  • How to make ketchup from scratch

Yule Log (Ages 7+)

Tis’ the season for delicious holiday creations, and we’re excited about the return of our incredibly popular yule log workshop. Campers will learn to make, bake, shape and decorate our signature double chocolate yule log, with various edible woodland decorations. Whether your child is looking for a chocolatey challenge or is simply here to eat, this workshop is sure to satisfy. 

What you will learn:

  • What a genoise sponge cake is and how to achieve one 
  • How to make, bake, assemble and decorate an epic yule log cake 
  • What a ganache is and the various consistencies you can achieve 
  • The difference between a buttercream and cream cheese frosting 
  • The importance of air when preparing a fluffy frosting 
  • The rule of 3 and height when decorating

Terrific Tacos (Ages 7+)

Back by popular demand, Terrific Tacos is back and will be your child’s ticket to delicious tacos for eternity! Under the direction and guidance of our chef instructors, our Terrific Taco Students will learn all the tricks of the trade when it comes to taco preparation. First we will master homemade corn tortillas, the base of our tacos. From there, we will focus on preparing our citrusy slaw and lime crema, and last we’ll tackle the most delicious black bean filling. This is one spec-taco-lar workshop you won’t want to miss!

What you will learn: 

  • What masa flour is and it’s relevance to Mexican cuisine 
  • How to make, shape, form and cook fresh corn tortillas from scratch 
  • The anatomy of the perfect taco and the versatility of it’s components 
  • How to extract flavour from dried spices 
  • Proper knife skills and cuts 
  • The difference between taste and flavour and how to make chef worthy dishes 
  • Stove top cookery

Snow Globe Sugar Cookies (Ages 7+)

Inspired by the beauty and magic of snow globes, Rooks to Cooks is excited to offer our innovative snow globe sugar cookie workshop! These cookies are not just beautiful to look at, they’re functional too! Give ‘em a shake and get mesmerized by the snowy sprinkles that move between the candy glass, just like a real snow globe. Under the guidance and support of our passionate chefs, campers will learn how to make, bake and decorate these amazing (and delicious) confectionaries through the preparation of our sugar cookie dough, royal icing, molten sugar glass. Need we say more?!

What you will learn: 

  • The importance of creaming when preparing cookie dough 
  • The importance of chilling your dough when working with rolled cookie dough 
  • How to make, shape and bake our signature sugar cookie dough
  • The sweet science behind candy making
  • The different types of confectionery (ie. candy) and the temperatures required to make them 
  • How to avoid crystallization (ie. “seeding”) when working with molten sugar 
  • What royal icing is and how to achieve the perfect consistency 
  • Various piping and flooding techniques as you decorate your sugar cookies

Spectacular Sushi (Ages 7+)

In honour of Chef Shai’s favourite food of all time, we are pleased to announce the release of a very special workshop, Spectacular Sushi! In this workshop, campers will learn all the tricks of the trade when it comes to preparing sushi – how to make the perfect sushi rice through hands-on experience of washing, drying, cooking and seasoning their rice. From there our sushi chefs in training will prepare a tasty teriyaki sauce completely from scratch, and practice their knife skills through the preparation of a variety of different fillings for their maki. Last they will rock and roll their maki before finally ending off with our signature miso soup! Our mouths are watering already. 

What you will learn: 

  • The difference between short and long grained rice 
  • How to wash and dry rice, and the importance of this step 
  • What tezu is and how to season sushi rice 
  • Proper knife skills and various cuts 
  • The importance of reduction when preparing teriyaki sauce 
  • How to prepare maki like a pro 
  • What miso is and how to prepare miso soup from scratch

Snowman Cake Pops (Ages 7+)

Do you want to build a snowman? In this workshop, campers will learn a wide variety of cake making, baking, and decorating techniques as they prepare our signature snowman cake pops from start to finish. First we will prepare our signature vanilla cake. As it bakes and cools, we’ll prepare our buttercream. Next we’ll prepare our cake pop mixture to chill, and last, we dip and decorate our cake pops to perfection. You’re not going to want to miss out on these adorable and delicious winter inspired creations!

What you will learn: 

  • The difference between mechanical and chemical leavening
  • The difference between baking powder and baking soda
  • What creaming is and the importance of creaming when making cakes 
  • What gluten is and why it’s important to consider when making tender cakes 
  • The value of using buttermilk over milk when preparing cake 
  • How to achieve the fluffiest buttercream possible 
  • How to make, shape and decorate our signature snowman cake pops

    Perfecting Pasta (Ages 7+)

    Attention pasta lovers, we have got the perfect workshop for you! In Perfecting Pasta, we’ll be covering all our pasta bases as we prepare an epic line up of pasta recipes that will make a true nonna proud. We’ll tackle fresh pasta with the preparation of our signature egg pasta dough. While it rests, we will learn about dry pastas and prepare the creamiest cheesiest baked macaroni and cheese recipe in the world! As our mac and cheese bakes, we’ll return to our fresh pasta and execute an elegant basil ricotta ravioli, handmade to perfection, and serve everything up just in time for lunch. After participating in this workshop, the pastabilities are endless! Don’t wait and secure your child’s spot today.

    Holiday inspired Macarons (Ages 7+)

    Our marvelous macaron workshop is back, but this time with a holiday twist! Who can resist these beautiful and popular French sandwich cookies? They are colourful, texturally sound and come in an endless supply of colours and flavours. Under the guidance and direction of our pastry chef instructors, participants will learn to make these elegant treats like a true pro. The recipes featured in this workshop includes both our nut-free macaron shells and TWO delicious holiday inspired fillings the whole family will enjoy. 

    What you will learn: 

    • The anatomy of a macaron 
    • What a meringue is and the different types 
    • How to achieve the perfect macaron batter consistency
    • The importance of drying macaron shells and why 
    • How to achieve the perfect bake of a macaron shell  
    • How to pipe like a pro 
    • How to fill and sandwich macarons cleanly and efficiently
